Sesame Paste And Goji Berry Salad – Perfect For Warm Days

Before we get to the salad, let’s take a look at part of the dressing which is made with tahini which is a sesame paste.



You can buy this at the store but it is much better homemade and less expensive. And, it so easy to do. Tahini is simply sesame seeds toasted and ground with olive oil. That’s it.

To Make Tahini (makes 3/4 tahini paste):

  • 1 cup sesame seeds
  • 3 tbsp organic olive oil (may need up to 1/3 cup)


  1. over medium high heat toast sesame seeds (no oil, nothing)
  2. stir frequently until brown (golden), don’t burn
  3. cool for about 10 minutes
  4. add to blender and add olive oil, as you blend check for consistency, may need to add more olive oil for the thickness you want, can make it somewhat pourable or thicker
  5. place paste in a jar and store in refrigerator (keeps for several months)

Now that you have the tahini paste it’s time to make the salad. This salad is made with broccoli and gogi berries and the dressing will be creamy. This is a vegan salad. Can be served warm or cold.

Broccoli and Goji Berry Salad With Tahini, Serves 4, Ingredients:

  • 2 broccoli heads with stems, cut up
  • ½ red onion, chopped
  • ½ cup gogi berries
  • ½ cup pumpkin seeds (optional)

  • 1\2 cup tahini paste
  • 1 clove of garlic
  • ¼ cup nutritional yeast
  • ¼ tsp paprika
  • ¼ tsp mustard powder, can use brown mustard and horseradish (¼ cup)
  • ¼ tsp turmeric
  • 2 tbsp cider vinegar, can use apple vinegar or even balsamic
  • 4 tbsp organic olive oil
  • water to create desired thickness


  • steam broccoli till tender crisp, rinse in ice bath to stop cooking
  • make dressing – put garlic in blender to mince, then tahini, yeast, paprika, mustard, turmeric, cider vinegar and olive oil. Blend until smooth and creamy. Should be somewhat thick. If too thick add 1 tsp of water at a time till you get the consistency you want.
  • In a large bowl, mix broccoli and onions. Toss with dressing and top with gogi berries and pumpkin seeds if you have them. Serve warm or cold.

Now that summer is here, picnics become very popular and many families will want to barbecue (whether vegan or meat-lovers).



Although baked beans are always a good choice as a side, you might want to veer away from mac and cheese (dairy) and the ever popular forms of potato salad (eggs in salad or mayonnaise). ​

You may have vegetarians or vegans stopping by. If this is the case, a Kohlrabi salad is a good idea and this can be served as a main dish not just a side. This colorful salad is easy to make and is high in fiber, proteins and antioxidants that can be topped with a veggie dressing. What more do you need!

Some of you may not be familiar with kohlrabi or perhaps you’ve been afraid to buy it because you don’t know what to do with it. The bulb of this plant is similar to cabbage and it has stems that taste somewhat like broccoli. It is crunchy, juicy and sweet. I know I like to eat the bulb like an apple and in fact many other people do as well. The stems have leaves at the end and these leaves can be used as greenery not unlike kale in a salad. Essentially all parts of the plant are edible.

This plant is a powerhouse of nutrition. It contains a high concentration of vitamins A, C, niacin, B6, thiamin and pantothenic acid. So it is rich in vitamin Bs. Kohlrabi contains anti-inflammatory agents that help fight against cancer and act as an immune booster. This lowers your chances for heart disease, vascular problems and age-related brain diseases. It also contains minerals such as iron potassium, copper, calcium and manganese. How to Make Kohlrabi Salad?

Serves 4-6:

  • Buy 1 large (or two small) kohlrabi (use bulb only, peel and grate like cabbage)
  • 1 small red cabbage grated
  • 1 or 2 medium carrots, can leave peel on if cleaned properly and grate
  • small red onion or 6 leaks chopped
  • ¼ cup cilantro chopped
  • ¼ cup craisins or raisins (can also use mandarin oranges)


  • 1 tbsp sugar
  • 1 tbsp cider vinegar or juice and zest of 1 lemon or lime
  • 1 tsp Dijon mustard or brown mustard with horseradish
  • 3/4 cup organic olive oil


Combine all veggies and fruits together in a large bowl. To prepare the dressing, whisk sugar, vinegar or lemon, mustard and olive oil. Pour dressing over salad and toss until coated well. This is best if served cold so store in the refrigerator for a couple of hours before serving.

Goals – How many times have you set unrealistic goals? Quite often people set up long term goals and then become overwhelmed trying to achieve the bigger picture of things. I had an experience when I was seven years old. My dad asked me to sweep the drive way and of course it was Saturday and I wanted to play with my friends. This was just unfair. This was the biggest drive way you have ever seen. I mean it must have been miles long and wide too. So, I said that will take me all day long. So, he said “I’ll be right back”. He went into the house and got a piece of chalk. Then, he divided the drive way into 6 areas all approximately equal to each other. Then, he said, “I want you to sweep the first section and see how long it takes and write it down. Rest a few minutes. Do the next section, rest and then the third section. When you get that done we will take a really big break and have some pop corn and homemade lemonade. Then you can do the other three the way you did the first three. Looking back at my notes, I saw that it took 10 minutes per section for a total of 60 minutes. That wasn’t bad at all. This brought my thinking away from the entire drive way into manageable parts.

​I learned a lot that day. I got to play with my friends early that afternoon plus I had a wonderful treat. Take home message, establish short term goals but of course they have to be based on your long term goal (bigger picture of things). This is important and it really, really works.

Your Emotions and Food – Nothing wrong with eating but if you’re using eating as a mechanism for coping when you’re stressed, this will destroy your goals quickly. When this happens, talk to yourself and ask yourself what are you doing. Take a small amount of ice cream or whatever it is that you like and talk yourself out of the rest. Break the cycle of this behavior. You can do it!

Be Kind to Yourself – If you don’t like yourself, it is easy to violate diet and exercise. Think positive things about yourself and this will help to achieve your goals because you are worth it.

Nutrition – Either you eat junk food or your starving yourself which throws your body and brain into a state of confusion. Be kind to your body and brain by getting the proper nutrients it needs. This in turn will make it easier for you to stick to your goals because your body is functioning properly. You will feel energized and clear thinking which helps you to maintain control.

Quick Fixes – We all get hung up on quick fixes. How many times have you seen TV exercises that take 10 minutes and this is all you need three times a week. There is really no quick fix. You need long range goals for weight loss and weight management. There’s no way around it. Just make sure you break down your long range goals into smaller manageable components to ensure success. Medical Conditions – If it seems that you are doing the right thing and still no results, you may an underlying medical issue. Sometimes these are hormonal imbalances not caused by you. You need to go to the doctor and be tested for this. Once this is known, your doctor might be able to help you with that.
